Rainbow Cheesecake

Bake an easy cake with a touch of a rainbow.
If I were not vegan, probably my most favorite cake would be a cheesecake. It is easy as a pie, quick to prepare, and you can even make a no bake version, (I know such recipe).

Some time ago I wrote about amazing influence of rainbow colors on people in Rainbow Table project, believe it or not, sweets influence on us the same way. What if we could combine these two in one cooking project? Rainbow Cheesecake recipe I've found on Taste for Adventure by Tablespoon, is not only effective but also extremely easy to make even for those who are total, baking ignorant, just like me.

What you need:

  • 2 cups finely crushed graham crackers
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 6 tablespoons unsalted butter, softened
  • Filling
  • 4 packages (8 oz each) cream cheese, room temperature
  • 1 1/3 cups sugar
  • 2 teaspoons vanilla
  • 1 pinch salt
  • 1 cup sour cream
  • 1 cup heavy cream
  • 4 large eggs
  • 1 each of liquid food colors (blue, yellow, green, red)
