Zero-waste in the kitchen is a great idea. So many tasty products end up in the garbage because we just don’t know their potential. Even if you are used to throwing away cauliflower leaves, after reading this article you are not going to do it again!
The power of leaves
It goes without saying that cauliflower leaves are really healthy. Few of us, however, realize how many nutrients they contain. These include vitamins and microelements like calcium, iron and fiber (augmenting intestines and preventing constipation).
Finally, there are so many calories there and so many ways you can use them!
Everyone loves to watch a movie with a packet of chips on the lap. Well, you know it’s not very healthy, don’t you? Instead, go for… cauliflower leaves!
Wash them carefully and cut into small pieces. Coat it with oil and spices (our recommendation is sweet paprika, hot peppers and smoked one, with a bit of rosemary and thyme) and put it into a 200 0 C oven for 10 minutes.
In the soup
Vegetable soup welcomes anything. Drop some cauliflower leaves and boil everything together. You can freeze them, too. Just remember – strain them well before freezing – too much water left will turn them into a big chunk of ice.
Marinate and experiment
If you are into oriental flavors, marinate cauliflower leaves in soya sauce and have it with wok-pan noodles.
Have you got some harissa? Add half a spoon to the cauliflower leaves, plus a half teaspoon of salt and bake it.
You can put the leaves on a slice of bread and have it like a lettuce sandwich. Or use them to make cabbage rolls (of course cauliflower rolls that would be). Crunchy with their subtle flavor they will find many fans among your guests
