I love cooking for my family, I think all the best comes from it. I have a problem with baking, though. I would love to, just to have some healthy alternative for from-the-store sweets, but I'm suffering from the constant lack of time.
The Watermelon Cake
we posted here a while ago was a great tip for me. For my children, it still looked more like a fruit than the cake, so they keep asking me for the 'real' one, but I just can not find time for that.
At least that what I was thinking till I found this No Bake Watermelon Cake on I save on everything form A2Z blog. It looks beautiful, and I'm pretty sure that both – the kids and the adults would be equally delighted by it. The simplicity of the idea – just to 'dress' the fruit using other fruits and healthy stuff (the almonds), the home made whipped cream is really a little compromise, amazes me! I ask myself how come I have never thought of something like that.
That is what I like the most having to little time for everything – minimum effort, maximum effect. And, what is also priceless, in one cake I've got answers for many needs. My children would get the cake they were asking for, I would gain some time for the other necessary activities and the desire to feed my family healthy would be fulfilled even in terms of sweets.
